Sweet Potato/Yam Fries

These fantabulous fries are oven baked!

Super Yummy and not drenched in oil. . .

Bake 375* for 35 minutes

Ingredients:

3 T coconut oil  {any solid cooking fat}
​1 small/medium sweet potato or yam / person
Cut into thin strips
​Salt to taste

Optional:

Parchment Paper
Baking Sheet

Pair With:
Chicken Tenders
Blood Orange Ginger Saucyness

 

Directions:
With the peel on cut the potatoes into skinny strips 1/4″ diameter

Line baking sheet with parchment paper

Add the solid cooking fat and the fries bake at 375* for about 35 minutes depending on your oven.

Make sure you distribute the oil all over the fries once it is melted and flip them half way into baking.

I like mine a bit brown and crispy

Savory Herb Mix

Working with Paleo and AIP eating protocol I really miss things like chicken tenders and steak fingers etc.

This Savory Herb Mix makes more than you will need for a meal and stores nicely in a container.

This mix is very versatile. Changing or mixing up favorite herbs!

Sage ~ Rosemary ~ Thyme

Ingredients:
1 C coconut flour
1 C arrowroot flour
1 T rosemary dried or fresh ground*
1 T Thyme dried or fresh ground*
1 T Sage dried or fresh ground*

1 T oregano  dried or fresh ground*
1 T dried parsley
1 T sea salt

Optional:
Marjoram dried or fresh ground*
Tarragon dried or fresh ground*
Onion Powder
Garlic dried or fresh ground*
Turmeric dried or fresh ground*

Any mix of your favorite savory herbs

Directions:
Blend all of these together and put on a plate or plastic bag to coat the meat. Remainder: stores in a glass jar.

Chicken Tenders

Eating AIP or Paleo I missed chicken tenders, steak fingers, fish n chips etc.

So I created my Chicken Tender Recipe!

Ingredients:
3 T coconut oil  {any solid cooking fat}
6 – 8 chicken thighs
or
4 – 6 chicken breasts
Cut into bite size pieces
3/4  to 1 C coconut milk*
3/4  t 1 C savory herb mix*
*depending on how many pieces you may need to add more.

Large Cast Iron Skillet
Baking Sheet

Pair With:
Sweet Potato/Yam Fries
Blood Orange Ginger Saucyness

Directions:
Drop the bite size pieces into the coconut milk and then dredge in the savory herb mix

Melt the cooking fat in a skillet on medium high heat* and turn the oven on to 350*
The size of your family will determine if you can get away with one skillet or not.
If you have more than your skillet allows you will have to use a baking sheet for the oven portion.

Put the pieces into the skillet to brown and move to a plate or baking sheet to finish browning the tenders. Then either put them back into the skillet or leave them on the baking sheet. Do not crowd them while browning in the skillet.

Throw them in the oven for about 20 minutes.

*Cooking with gas will be a hotter flame than electric.
Since the oil is minimal these can burn easily.
Be careful not to burn.
